Anise is a bright, sweet-aromatic spice note with a distinctive licorice facet—cool, slightly camphoraceous and fennel-like—evoking pastis, absinthe, and old apothecaries. Used sparingly to avoid overpowering, it lifts aromatic fougères and colognes, sweetens orientals and gourmands, and forms licorice/almond accords (via anethole and anisic materials), harmonizing with citrus, lavender, vanilla, heliotrope, tonka, tobacco, and woods.
