Ethylvanillin is a powerful synthetic vanillic material, brighter and cleaner than vanillin, with an intensely sweet, creamy aroma carrying cocoa/chocolate and caramel facets and a soft, powdery balsamic warmth that evokes icing sugar, custard, and white chocolate. Perfumers use it in minute traces to sweeten and round accords or in higher doses to shape gourmand and amber styles, where it boosts diffusion and longevity, smooths florals and woods, and partners especially well with benzoin, tonka, labdanum, patchouli, musks, spices, and candy-like notes such as ethyl maltol.
