Hawthorn (aubépine) has a tender, powdery white-floral scent with almond–marzipan and soft anise facets, honeyed sweetness, and a faint green edge; the fresh blossom can even carry a mild animalic, fishy nuance from trimethylamine that perfumery usually softens. Evoking spring hedgerows and nostalgic romance, it is typically recreated with anisic aldehydes and heliotropin as a heart note to cushion muguet, lilac, mimosa, and orange blossom, add powder to floral bouquets, and lend sweetness to chypres and aldehydic styles.
