Melilotus (sweet clover) lends a warm, sun‑dried hay sweetness dominated by coumarin, evoking soft vanilla‑tonka, almond and honeyed herbal tones with a slightly powdery, tobacco‑like nuance. In perfumery it is used in the heart or base to impart cozy, gourmand and hay‑like facets, bridging florals and ambers and serving as a natural coumarinic fixative in fougère, chypre and oriental constructions.
