Persimmon smells velvety and honeyed—ripe and jammy with apricot-, pear- and fig-like facets softened by a gentle, slightly tannic dryness that prevents it from becoming cloying. It sits between fresh fruit and mellow gourmand, often carrying a faint floral or apple-like lift. In perfumery persimmon is used to impart luminous, autumnal fruitiness and a smooth, gourmand roundness in fruity‑florals, oriental gourmands and woody compositions, where it is commonly blended with rose or peony, vanilla or sandalwood, musk and warm spices to add sweetness, warmth and a subtle astringent edge.
