Sap is a green, dewy note that smells of fresh-cut stems and living plant juice—slightly sweet, watery, and chlorophyllic—with nuances that can range from milky latex (as in broken fig stems) to softly resinous, coniferous facets, evoking spring growth and the vivid snap of crushed leaves. In perfumery it adds lifelike freshness and a “wet green” realism to florals, fougères, woods, and fig themes, typically built from leaf alcohols (cis-3-hexenol), galbanum-type materials, Stemone, blackcurrant bud, gentle balsams, and milky lactones to suggest natural sap flow.
