Walnut has a dry, nutty aroma that is more austere and woody than sweeter nuts, combining roasted, oily facets with faint bitterness, tannic shell dust, and a green-husk earthiness that can recall coffee grounds, toasted bread, and polished wood. Used sparingly, it lends gourmand warmth and texture without overt sweetness, enriching woody, tobacco and leather structures, or pairing with caramel, maple-like nuances, coffee, chocolate, tonka and balsamic resins; greener interpretations can evoke orchard leaves in chypres and fougères.
