Medlar has a mellow, autumnal fruit aroma that melds quince-like tartness with baked-apple, cider, and honeyed dried-fruit facets, with a faint leathery-earthy twang that evokes orchard harvests and old-world pantries. In perfumery it lends rustic, boozy warmth and an antique orchard character to gourmand, chypre, and woody-amber compositions, bridging fresh apple notes with fig- or prune-like depth. Usually built as an accord using apple/quince esters, damascones and ionones, caramelic tones, and osmanthus-honey nuances, and dosed sparingly to avoid musty over-ripeness.
